
I love a good pantry binge and this caramel peach crumble pie is just exactly why! I realized during the cleaning out spree today that I had stocked up way to much on canned peaches and needed to down size. Luckily I also had one of my jars of homemade caramel just hanging around in the fridge too! So off to making a pie I went!
Let me tell you now I cheated on the crust…😬
4 cans of canned peaches sliced and drained. 1/4 cup of corn starch
1/4 cup salted caramel
1 teaspoon cinnamon and then mix it all up and let it rest.
Cheating on my usual crust recipe today. I realized I had these in the fridge… not sure how exactly… but they needed to be used!
Uhhh 💩… Oh well on to the crumble.
Another 1 teaspoon cinnamon
3/4 cup of flour
1/4 cup light brown sugar
1/4 cup white sugar
Mix that together and then add 6 tablespoons of cold butter
Mash that up till it looks crumbly. (Pea size is great!)
Put the peaches in the pie crust
And begin the topping process. I just dumped it all on!
I then folded over my pie crust to seal it up a little more. Pop in the oven at 450 for 45-55 minutes and wa la!
