
I was in desperate need to bake a small snack meal for a friend who came over during brunch time for a work meeting. I had nothing. Nothing prepped. No groceries done. I was in a panic and a tizzy… then I checked Pinterest.
I found this super simple Cinnamon Coffee Crumble Cake recipe and new I could manage! Yay! It was easy. Like super. And turned out wonderful!!
Preheat oven to 375 degrees.
In a stand mixer I mixed up: 1 1/2 cups flour, 3/4 cup sugar, 2 1/2 tsp baking powder, 3/4 tsp sea salt, 1/4 cup butter, 3/4 cup milk and 1 egg.
In a seperate bowl for the topping I mixed up: 1/3 cup brown sugar, 1/4 cup flour, 1/2 tsp cinnamon and 3 Tbsp cold butter in small pieces.
Butter up a 8×8 pan. The directions called for a brownie pan. I don’t have one so I used a bread pan! Worked out nicely! Batter down first.
Topping on top…
Bake in a 375 degree oven for 25-30 minutes. Serve warm.
It was coffee cake heaven! And it worked out beautifully for a breakfast meeting snack!
