Butter Roasted Chicken Recipe

I love chicken. I love any kind of chicken! But the crockpot chickens you guys are my latest obsession and this one is done by my idol! The Pioneer Woman Ree 🙂 Here’s a link to her site… and pictures of my attempt. Butter Roasted Chicken Pioneer Woman Style

 Preheat oven to 400 degrees Ingredients include: Fryer Chicken, 4 Lemons, 5 sprigs of Rosemary, 2 Sticks of Butter and Salt and Pepper to taste. A stick of butter 3 branches (without the branch) of Rosemary chopped. Chop it more then this. I was rushing… which is exactly what PW did… and says not to do… 2 lemons zested with salt and pepper to taste. Mush it. Mash it together. I used my fingers because I like to make a mess. 🙂 Plop it on your birdie. Smear it all over! Don’t forget to get into all the cracks and crevices! Cover it all!! Stuff it with 2 quartered lemons and as many rosemary sprigs as possible! Then put in oven for 1 hour and 15 minutes. Look at the gloriousness!!! Cover it with foil after pulling it out for 10 minutes. Let your bird chill out dude… Now serve…. Oh my goodness golly you guys! Ahhmazing! I served our bird with whole steamed artichokes with lemon and butter (home grown by my neighbor) and some creamy mashed potatoes. Oh my Lordy… This recipe is amazing. It’s delicious. Use the leftover chicken on anything you can!
