Lemon Balm Mint Basil Pesto

Presto! My herb garden has had a very strange yield this year and gave me a bunch of lemon Balm, no basil and some mints including strawberry, orange and basil. I think I have mentioned before that I really enjoy prepping so I do make a good amount of this stuff every time. About 2 or 3 cups.

I’m big on easy sauces that create easy meals . and who doesn’t love just throwing everything into a food processor and being done with it. Easy peasy.

Like this…And then to this…Tada! Boom! Done.Like I said… Easy peasy. 

Lemon Balm Mint Basil Pesto:

  • 1 cup packed fresh lemon balm
  • 3/4 cup packed mint basil
  • 1/4 cup pine nuts
  • 1/2 cup grated parmersan
  • 1/2 olive oil
  • 3 cloves of fresh chopped garlic
  • 1 lemon juiced

Directions: Add all ingredients to a food processer and process all the way to a thick sauce.

I love mixing this sauce with some pan heated Whole Crockpot Chicken  leftovers and some fettuccine noodles.
