So I honestly make this chicken about twice a month. I buy two young birds and make the bird for dinner one night and then shred up the leftovers for sandwiches and other types of dinners for later. From using it in my Lemon Balm Pesto or adding it into some Thai Peanut Noodles. It’s the easiest thing in the world and when I’m not feeling the motivation to make dinner then the leftover chicken is amazing in a pinch.

It’s just so so so eassssy. Stuff it with lemon and rosemary. Cover it in butter… Giggle with joy when people say “Oh my gosh you must’ve slaved over this dinner!” When you know how you really didn’t… You’re welcome. You. Are. Welcome.
