Thai Peanut Sauce

This sauce makes me crazy! Every time I think of it I’m hungry for it. Every time I even picture it I see the most delicious meal I have ever had. I see one of my happiest memories in childhood. I just see good stuff. Really really good stuff.

It’s an easy sauce to make and I love having it on hand whenever it’s a lazy cooking day. I use it with my always on hand fettuccine noodles and leftover roasted chicken.

Ingredients:

  • 1 cup organic peanut butter
  • 1 juiced lime
  • 4 TBSP chopped cilantro
  • 1/4 cup olive oil
  • 2 TBSP rice vinger
  • 1 tsp honey
  • 2 crushed and chopped garlic cloves
  • 1 tsp salt
  • 3 TBSP sliced and chopped ginger
  • 3 TBSP soy sauce

Directions: In a small stove top pot fry up ginger and garlic in the olive oil over medium heat. Turn down heat and melt in peanut butter on medium low. Once melted add in all of the other ingredients and stir till fragrant. It will already be pretty fragrant but once it smells too good not to eat. Once it’s all a smooth liquid pour into a jar and let cool. Then refrigerate for up to a month.

Yup! It’s that easy! And yes I promise you if you have a love for peanut sauce like I do this will take you to a whole new happiness!

Serving suggestion: I almost always boil up some Thai noodles and serve this sauce cooked over them with pieces of Rotisserie Chicken mixed in with chopped cilantro and half of a fresh juiced lime as garnish.

Okay well now I really have to go because this sauce is on my brain again and I need to get some into my tummy nowish!
