
On the Husband’s birthday he always wants a pie instead of cake.
And as much as I love Apple Pie I needed something a little extra. AND when you have the lack of apples like I did because of COVID shopping restrictions you gotta get creative.

- Crust • (I used my go to Basic Pie Crust Recipe in the link above.)
- Filling •
- 2 peaches
- 1 pear
- 1 Large apple
- 1/2 cup white sugar
- 1/4 cup all purpose flour
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Topping •
- 1/2 cup all purpose flour
- 1/3 cup brown sugar
- 1/4 tsp cinnamon
- 1/4 tsp of nutmeg
- 1/4 cup cold butter
- 1/3 cup chopped pecans
- Preheat oven to 375. Lay pie crust into a glass pie pan and press and crumps edges.
- In a large bowl lightly mix sliced peaches, apple and the pear.
- In a separate small bowl mix dry ingredients together. Slowly incorporate dry ingredients into fruit mix. Pour in pie crust.
- In another small bowl mix together topping ingredients, except the pecans, and cut in the butter. Gently stir in pecans and evenly sprinkle topping onto pie.
- Bake pie for 45-55 minutes till the pie looks golden brown all over the top. After the first 20 minutes of baking line the edges of the pie if they start browning too quickly.
- Allow to cool and serve!

He loved it. I loved it! He told a neighbor about it and he asked how soon he could come over to get a piece. I’ve e honestly never had so much pride in a pie in my life. Other than maybe like my first one ever…
