Have you been wondering what you are going to do with all of your winter pomegranate harvests like I do? Every year when I get them my brain stumps and goes… well now what?
When I saw on a random Pinterest video a 3 ingredient Pomegranate Almond Bark I knew I had to give it a whirl!
Of course I added a couple things to get in right in my quarantine pantry but it worked perfectly!
All you need is:
- 6 pomegranates
- 30 chopped almonds
- 2 Tbsp coconut oil
- 1tbsp coarse salt
- 2 cups chocolate chips
Step 1: Deseed all pomegranates. This is a bit of a task but extremely worth it I promise. Lay all the seeds flat on a paper towel lined cookie sheet over night.
Step 2: Melt chocolate and coconut oil in double broiler. While you slowly stir that roughly chop the almonds and set into a small bowl.
Step 3: Once all chocolate is melted, take it off the heat and mix in pomegranate seeds and chopped almonds. Gently mix! You do not want to open all of the seeds open into the chocolate.
Step 4: Line a baking sheet with wax paper and spoon out little piles of the chocolate amazing ness onto the sheet. Once the sheet is filled sprinkle on the coarse salt. Just a pinch per cluster/pile.
Step 5: Refrigerant overnight.
Step 6: Enjoy.
And then package these babies up for other people because I promise it’ll be hard having them around and not eating them. I can promise you now. I’m struggling 😅
I may have eaten a lot more of them than I should’ve…
